Arbi ki Sukhi Sabzi
serves: 2 persons
Ingredients:
- 3 arbi
- 1½ tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon carom seeds
- 1 teaspoon red chilli powder
- ¼ teaspoon turmeric powder
- ½ teaspoon amchoor powder
- Salt to taste
- 1 tablespoon chopped cilantro
Method:
- Peel arbi and cut into thin stripes (like french fries). Wash and drain the peeled and cut arbi.
- Heat oil in a pan. Add cumin seeds and carom seeds. After they crackle, add sliced arbi, and turmeric powder. Mix well. Put the lid on a pan and let it cook for 10-15 minutes or until the arbi gets cooked completely.
- Add Salt, red chilli powder, and amchoor powder to the cooked arbi. Add chopped cilantro and let it simmer for for another 5 minutes.
- Swith off the flame and let it be there for 30 minutes.
- Serve with roti.
