Peel arbi and cut into thin stripes (like french fries). Wash and drain the peeled and cut arbi.
Heat oil in a pan. Add cumin seeds and carom seeds. After they crackle, add sliced arbi, and turmeric powder. Mix well. Put the lid on a pan and let it cook for 10-15 minutes or until the arbi gets cooked completely.
Add Salt, red chilli powder, and amchoor powder to the cooked arbi. Add chopped cilantro and let it simmer for for another 5 minutes.
Swith off the flame and let it be there for 30 minutes.
