Ingredients:
- 1 cup canned black beans, drained and rinsed
 - ¾ cup cut vegetables of your choice (example:corn, zucchini,onions, broccoli, )
 - 1 tablespoon of olive oil
 - 1 teaspoon chili powder
 - Salt and pepper to taste
 - Chaat masala to sprinkle (optional)
 - ½ cup shredded cheese
 - 2 tortillas
 
Method:
- Heat a tablespoon of oil in a pan. Add cut vegetables into it. Saute for 2 minutes.
 - Add black beans to the vegetables. Add salt, pepper and chili powder.
 - Heat large non-stick tava/pan. Place one tortila on it. Add vegetables and bean mixture. Sprinkle some chaat masala. Top it with shredded cheese.
 - Place another tortilla on it. Press the tortilla with a spatula. Cook from both the sides turning once. Be careful while flipping, since mixture may come out.
 - Place the quesadilla on a plate. Cut into 4 triangles using a pizza cutter.
 - Serve hot.
