Ingredients:

  • 1 cup all purpose flour
  • ½ cup butter (at room temperature)
  • ½ cup brown sugar
  • ½ cup molasses
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground clove
  • pinch of salt

Method:

  1. Pre-heat oven to 350℉. Line 12 muffin tins with cupcake liners.
  2. Get a bowl and add butter and sugar. Beat the mixture until it is light. Add molasses and beat until it is well combined. Add eggs and beat the mixture.
  3. In an another bowl, Sift together all purpose flour, groung ginger, cinnamon, nutmeg, clove, and salt. Add these dry ingredients to the wet ingrediends. Mix until everything is just incorporated. Stir in vanilla.
  4. Pour the batter into the prepared muffin cups. Bake for 22-25 minutes.
  5. Cool in the pans for 5 minutes. Remove from the pan and cool completely on a wire rack.
