Ingredients
- 1 cup Quinoa (uncooked)
- ⅓ cup frozen corn
- ⅓ cup thinly sliced onion
- ⅓ cup thinly sliced carrots
- 3-4 scallion (Spring onions) chopped (white onions can be used with the regular onions)
- 1 tablespoon of olive oil
- Salt and Pepper to taste
- 2 tablespoon of dark soy sauce
- 1 tablespoon of tomato ketchup
- 2 cups of water
Method
- Wash and rinse quinoa 2-3 times. Heat a saucepan and add quinoa to it. Add 2 cups of water. Let it boil and then reduce the heat to low and cover the pan.
- Simmer the quinoa for sometime with a lid on. There should not be any water. Gently fluff the quinoa and keep it aside.
- Heat a tablespoon of oil in a pan, and add onions and saute for a while. Add all the vegetables (except scallions). Let them cook.
- Add salt, pepper, soy sauce, and ketchup. Give it a proper stir.
- Add quinoa, mix it properly and let it cook for 1-2 minutes.
- Finally add scallions and serve immediately.
