Vegetable Pulao

Ingredients:

  • 1 cup Basamati Rice
  • 2 cups cut mix vegetables (cauliflower, green peas, carrots, bell pepper)
  • 2 medium onions sliced
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 3 tablespoon oil
  • 1 tablespoon butter
  • 1 tablespoon chopped cilantro
  • 1 tablespoon sugar
  • Whole garam masala (3-4 green cardamoms, 3-4 cloves, 1 teaspoon cummin seeds 2 bay leaves, 1 cinamon stick )
  • 2½ cups of water
  • 1 tablespoon cashews

Method:

  1. Wash rice, drain it and keep it aside for 30 minutes.
  2. Cut the vegetables and slice the onions. Make ginger & garlic paste.
  3. Heat 1 tablespoon oil and 1 tablespoon butter in a pan. Add whole garam masala and fry for a minute.
  4. Add half of the sliced onions and saute continiously. Add ginger-garlic paste to it.
  5. Add all the vegetables. Mix everything properly and fry for 2-3 minutes.
  6. Add rice and saute very carefully. Add salt and sugar.
  7. Get a microwave safe bowl. Add water and microwave it for 2 minutes.
  8. Add this hot water to the rice. Put the lid on and cook the pulao on medium to high flame. It may take 15-20 minutes.
  9. Check on the rice. If it is cooked, switch off the flame. Add lemon juice and stir it carefully. Put the lid back on.
  10. Heat 2 tablespoon of oil in another pan. Add cashews and fry them until they are golden. Drain the cashews on the paper. In the same oil, add half of the sliced onions and fry until it becomes golden brown. Drain it on the paper.
  11. Garnish pulao with cashews, fried onions and chopped cilantro.

Quinoa Fried Rice

Ingredients

  • 1 cup Quinoa (uncooked)
  • ⅓ cup frozen corn
  • ⅓ cup thinly sliced onion
  • ⅓ cup thinly sliced carrots
  • 3-4 scallion (Spring onions) chopped (white onions can be used with the regular onions)
  • 1 tablespoon of olive oil
  • Salt and Pepper to taste
  • 2 tablespoon of dark soy sauce
  • 1 tablespoon of tomato ketchup
  • 2 cups of water

Method

  1. Wash and rinse quinoa 2-3 times. Heat a saucepan and add quinoa to it. Add 2 cups of water. Let it boil and then reduce the heat to low and cover the pan.
  2. Simmer the quinoa for sometime with a lid on. There should not be any water. Gently fluff the quinoa and keep it aside.
  3. Heat a tablespoon of oil in a pan, and add onions and saute for a while. Add all the vegetables (except scallions). Let them cook.
  4. Add salt, pepper, soy sauce, and ketchup. Give it a proper stir.
  5. Add quinoa, mix it properly and let it cook for 1-2 minutes.
  6. Finally add scallions and serve immediately.
