Heat oil in a pressure cooker. Add cumin seeds. As soon as it starts splatter, add asafoetida, curry leaves, ginger and chopped chili. Saute well.
Add chopped vegetables, turmeric powder,sugar and red chilli powder. Add oats and moong dal. Mix everything.
Boil 3 cups of water in a seperate bowl. Add the boiling water to the pressure cooker. Put the lid on and cook khichdi upto 4-5 whistles. Turn off the flame and wait until the pressure is down.
Open the lid and stir the khichadi. Garnish with chopped cilantro.
