Oats Khichdi
Ingredients:
- ½ cup oats
- ½ cup yellow moong daal
- 1 cup mix vegetables
- 1 tablespoon ginger grated
- 1 green chili chopped
- ¼ teaspoon turmeric
- ½ teaspoon sugar
- 1 teaspoon oil
- ½ teaspoon cumin seeds
- Pinch of asafoetida
- 5-6 curry leaves
- ½ teaspooon red chilli powder
- 3 cups water
- 1 tablespoon chopped cilantro

Method:
- Wash and rinse moong dal and keep it aside.
- Heat oil in a pressure cooker. Add cumin seeds. As soon as it starts splatter, add asafoetida, curry leaves, ginger and chopped chili. Saute well.
- Add chopped vegetables, turmeric powder,sugar and red chilli powder. Add oats and moong dal. Mix everything.
- Boil 3 cups of water in a seperate bowl. Add the boiling water to the pressure cooker. Put the lid on and cook khichdi upto 4-5 whistles. Turn off the flame and wait until the pressure is down.
- Open the lid and stir the khichadi. Garnish with chopped cilantro.
- Serve immediately with kadhi or yogurt.
