Ingredients:
- 1 cup Basamati Rice
- 2 cups cut mix vegetables (cauliflower, green peas, carrots, bell pepper)
- 2 medium onions sliced
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 3 tablespoon oil
- 1 tablespoon butter
- 1 tablespoon chopped cilantro
- 1 tablespoon sugar
- Whole garam masala (3-4 green cardamoms, 3-4 cloves, 1 teaspoon cummin seeds 2 bay leaves, 1 cinamon stick )
- 2½ cups of water
- 1 tablespoon cashews

Method:
- Wash rice, drain it and keep it aside for 30 minutes.
- Cut the vegetables and slice the onions. Make ginger & garlic paste.
- Heat 1 tablespoon oil and 1 tablespoon butter in a pan. Add whole garam masala and fry for a minute.
- Add half of the sliced onions and saute continiously. Add ginger-garlic paste to it.
- Add all the vegetables. Mix everything properly and fry for 2-3 minutes.
- Add rice and saute very carefully. Add salt and sugar.
- Get a microwave safe bowl. Add water and microwave it for 2 minutes.
- Add this hot water to the rice. Put the lid on and cook the pulao on medium to high flame. It may take 15-20 minutes.
- Check on the rice. If it is cooked, switch off the flame. Add lemon juice and stir it carefully. Put the lid back on.
- Heat 2 tablespoon of oil in another pan. Add cashews and fry them until they are golden. Drain the cashews on the paper. In the same oil, add half of the sliced onions and fry until it becomes golden brown. Drain it on the paper.
- Garnish pulao with cashews, fried onions and chopped cilantro.
- Serve it with:

- Tomato Saar or
- Tomato Soup or
- Gujarati Kadhi
