Ragda Patties

Ingredients:

For Patties:

  • 2 medium potatoes boiled
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • 1 teaspoon leamon juice
  • ½ teaspoon red chili powder or green chili paste
  • 4 bread slice
  • Oil for brushing

Peas

For Ragda:

  • 1 cup dry white peas
  • 1 tablespoon coriander powder
  • 1 tablespoon cumin powder
  • ½ teaspoon red chili powder
  • ¼ teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon ginger-garlic paste
  • 1 teaspoon garam masala
  • 2 tablespoon oil
  • 1 teaspoon mustard seeds
  • ¼ teaspoon asafoetida

For assembling:

  • 1 serving green chutney
  • 1 serving sweet chutney
  • 1 small onion chopped finely
  • 1-2 small tomatoes chopped finely
  • 1 cup nylon sev
  • Chaat masala to sprinkle

Method:

  1. Wash and rinse dry white peas with water. Fill the bowl with water and soaked the peas for overnight.
  2. Next day,drain the water. Add the peas with fresh water into a pressure cooker. Cook upto 2-3 whistles.
  3. Heat oil in a pan. Add mustard seeds,asafoetida and turmeric powder. Add ginger garlic paste. Saute for a second. Add cooked white peas with water. Stir for a while. Add little water if necessary.
  4. Add coriander powder, cumin powder, red chili powder, garam masala and salt. Let it cook for 10 minutes. Turn off the heat and add chopped cilantro. Mix it properly.
  5. Mash the boiled potatoes. Add turmeric powder, red chili powder, leamon juice, and salt.
  6. chopped the bread slices and add them to a grinder. Make a fine powder. Add this bread crumbs to the potato mixture and knead to a soft dough. Divide the dough into 10-11 round shaped balls. Flatten these balls between your palms.
  7. Heat a flat tava or griddle. Place these flatten pattis on a pan. Brush them with little oil. Cook from both side by flipping the other side.
  8. Get a plate. place 2-3 patties. Add enough ragda all over the patties. Add a teaspoon of green and sweet chutney all over. Sprinkle chopped onion and tomatoes. Finaly, Add nylon sev and sprinkle chhat masala .
