Quinoa Bisi Bele Bhath

Serving: 2 persons

Ingredients:

  • 1 cup cooked quinoa
  • 1 cup cooked toor dal or ½ cup uncooked toor dal
  • 1½ cup cooked mix vegetables (Carrots, bell pepper green peas)
  • 1 medium onion finely chopped
  • 1 teaspoon oil
  • Pinch of asefoetida
  • 1 teaspoon urad dal
  • ½ teaspoon chana dal
  • ¼ teaspoon mustard seeds
  • ¼ teaspoon turmeric powder
  • 1 teaspoon tamarind paste
  • 4-5 curry leaves
  • 2 red chilies
  • 1 teaspoon red chili powder
  • 2 tablespoon MTR bisi bele bhath masala
  • 1 teaspoon jaggary
  • 1 tablespoon chopped cilantro

Method:

  1. Get toor dal in a bowl. Wash and rinse through water. Add 1 cup water and ¼ teaspoon turmeric powder into dal and keep it aide. Get mix vegetables in a another bowl. Add 1- 1½ cup water to the vegetables. Cook both dal and vegetables in a pressure cooker.
  2. Heat oil in a pan and add mustard seeds. when it starts to splutter, add chana dal, urad dal, asefoetida, red chillies, curry leaves. Saute for a while or until the chana dal and urad dal become brown.
  3. Add chopped onion and saute until the onion gets cooked. Add cooked toor dal and mix everything.
  4. Add vegetables along with its water. Add tamarind paste, jaggary, bisi bele bhath masala, salt, and red chili powder. Mix everything.
  5. Add cooked quinoa to the pan and stir well. Let it cook for a while. Check the water consistency and add little if needed. Also, check the taste and add little masala and red chili powder if you want more spicy.
  6. Finally, add chopped cilantro and serve hot.

Gobi Manchurian

Gobi Manchurian

Serves: 4 persons

Ingredients:

  • 1 medium Cauliflower cut into small florets
  • ½ cup chopped green bell pepper
  • ¾ cup chopped onion
  • ½ cup chopped spring onion (Only greens)
  • 1 tablespoon finely chopped ginger
  • 1 tablespoon finely chopped garlic
  • Oil to fry

For Sauce:

  • 1 tablespoon dark soy sauce
  • 1 tablespoon red chilli sauce
  • 1 tablespoon green chili sauce
  • 1 tablespoon ketchup
  • 1 tablespoon vinegar

For Batter:

  • 1 teaspoon black pepper powder
  • 2½ tablespoon cornstarch
  • ½ cup all purpose flour
  • Salt to taste
  • Water (around ½ cup)

Method:

  1. Heat oil for deep frying.
  2. Mix all the ingredients for batter except water. Add water slowly to prepare a thick batter. (I used ½ cup water but if you need more, add it.) Add cauliflower florets into the batter. Mix everything.
  3. Fry all the florets into the oil and drain them on a paper.
  4. Mix all the ingredients for sauce in a seperate bowl and keep it aside.
  5. Heat 2 tablespoon oil in a pan. Add ginger and garlic. Add chopped onion and saute everything. Add chopped bell pepper and fry for a while.
  6. Add all the ingredients for sauce, salt and sugar. Mix properly. Add fried cauliflower florets and mix gently. Cook for a while ( about 5 to 10 minutes) Turn off the flame. Sprinkle chopped greens on top.
  7. Serve immediately.
