Rajma

Rajma

Serves: 4 persons

Ingredients:

  • 1 cup Rajma (Kidney Beans)
  • 1 cup chopped onion
  • 2-3 medium tomatoes chopped
  • 1 inch ginger chopped
  • 4-5 garlic cloves chopped
  • 1 tablespoon oil
  • 1 teaspoon cumin seeds
  • ¼ teaspoon ground clove
  • 1 bay leaf
  • 1 teaspoon garam masala
  • ½ teaspoon red chilli powder
  • ½ teaspoon corriander powder
  • ¼ teaspoon turmeric powder
  • ¼ teaspoon ground cinnamon
  • 3-4 cups water
  • 10-12 mint leaves
  • 1 tablespoon chopped cilantro

Method:

  1. Wash and rinse Rajma. Soaked in sufficient water for 8-9 hours or overnight.
  2. On the next day, drain the water and rinse again with fresh water. Add this rajma in a pressure cooker with 3-4 cups of water and little salt. Cook on high flame for about 4-5 whistle.
  3. Heat 1 tablespoon oil in a pan. Add cumin seeds and bay leaf. Let them sizzle. Add chopped onions, ginger, and garlic. Mix well. Let it cook till raw smell of onion goes away. Add chopped tomatoes and cook everything for about 10-12 minutes.
  4. Add turmeric powder, red chilli powder, garam masala, cinnamon powder, clove powder, corriander powder, salt, and chopped mint leaves. Mix well and cook for another 5 minutes.
  5. Add cooked rajma to the pan along with the water. Let it boil and cook on a medium heat for 10-12 minutes.
  6. Add chopped cilantro and simmer for another 5 minutes.
  7. Serve hot with rice or naan.

Arbi Ki Sukhi Sabzi

Arbi ki Sukhi Sabzi

serves: 2 persons

Ingredients:

  • 3 arbi
  • 1½ tablespoon oil
  • 1 teaspoon cumin seeds
  • 1 teaspoon carom seeds
  • 1 teaspoon red chilli powder
  • ¼ teaspoon turmeric powder
  • ½ teaspoon amchoor powder
  • Salt to taste
  • 1 tablespoon chopped cilantro

Method:

  1. Peel arbi and cut into thin stripes (like french fries). Wash and drain the peeled and cut arbi.
  2. Heat oil in a pan. Add cumin seeds and carom seeds. After they crackle, add sliced arbi, and turmeric powder. Mix well. Put the lid on a pan and let it cook for 10-15 minutes or until the arbi gets cooked completely.
  3. Add Salt, red chilli powder, and amchoor powder to the cooked arbi. Add chopped cilantro and let it simmer for for another 5 minutes.
  4. Swith off the flame and let it be there for 30 minutes.
  5. Serve with roti.
