Coconut Mango Burfi

Ingredients:

  • 2 cups grated fresh coconut
  • ½ cup mango pulp
  • ½ cup milk
  • 1.5 cup sugar
  • 1 teaspoon cardamom powder
  • 1 tablespoon ghee/butter
  • 1 tablespoon of powdered sugar

Method:

  1. Grind coconut, mango pulp and milk in a grinder.
  2. Grease the tray with ghee and keep it aside.
  3. In a thick bottom pan, add the coconut mixture and sugar. Keep on stirring the mixture continuously for about 15 – 20 minutes. The mixture will start thickening.
  4. When it starts leaving the sides of the pan turn off the flame. Add powdered sugar and cardamom powder. Stir it thoroughly to make a big lump.
  5. Spread it evenly and smooth on the greased tray and let it cool down.
  6. Cut into pieces and serve the yummy coconut mango burfi!

Mayo Sandwich

Ingredients:

  • 12 Bread slices
  • Butter
  • 1 cup mayonnaise
  • ¼ cup grated carrot
  • ¼ cup finely chopped capsicum
  • ¼ cup finely chopped cabbage
  • ¼ cup sliced onion
  • 2 tablespoon chilli sauce
  • Salt to taste
  • ½ teaspoon dried oregano

Method:

  1. In a bowl whisk the mayonnaise well. Add all the chopped vegetables,chilli sauce, oregano and salt.
  2. Apply some butter on bread. Spread a thick layer of mayonnaise mixture. Cover with other buttered bread slice facing downwards.
  3. Toast or grill the prepared sandwich in electric toaster or griddle by applying butter on outer side.
  4. Cut each veg mayonnaise sandwich diagonally into two pieces and serve it with tomato ketchup.
