Black Bean & Vegetable Quesadilla

Ingredients:

  • 1 cup canned black beans, drained and rinsed
  • ¾ cup cut vegetables of your choice (example:corn, zucchini,onions, broccoli, )
  • 1 tablespoon of olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Chaat masala to sprinkle (optional)
  • ½ cup shredded cheese
  • 2 tortillas

Method:

  1. Heat a tablespoon of oil in a pan. Add cut vegetables into it. Saute for 2 minutes.
  2. Add black beans to the vegetables. Add salt, pepper and chili powder.
  3. Heat large non-stick tava/pan. Place one tortila on it. Add vegetables and bean mixture. Sprinkle some chaat masala. Top it with shredded cheese.
  4. Place another tortilla on it. Press the tortilla with a spatula. Cook from both the sides turning once. Be careful while flipping, since mixture may come out.
  5. Place the quesadilla on a plate. Cut into 4 triangles using a pizza cutter.
  6. Serve hot.

Tomato Pasta with White Sauce

Ingredients:

  • 2 cups cooked pasta
  • 1 cup of mix vegetables : Bell pepper, spinach, onions,green onions
  • 2 garlic pods minced
  • 1 teaspoon dry crushed basil leaves
  • 1 serving white sauce
  • 1 teaspoon oregano
  • 1 tablespoon olive oil
  • 1 teaspoon red chili flakes (optional)
  • 2 tomatoes puried
  • 2 tablespoon tomato ketchup

Method:

  1. Add a tablespoon of oil on a heated pan. Add minced garlic and saute for couple of seconds. Add sliced onions, then cook until the onions become translucent.
  2. Add the rest of the vegetables. Stir continuously. Add the tomato puree. Cook until the raw smell of the puree goes away.
  3. Add oregano, basil, red chili flakes, and tomato ketchup. Stir for a minute. Add the desired amount of white sauce and cook for another 1-2 minutes.
  4. Add pasta and mix everything. Add a little water if necessary. Put on a lid and simmer for 2 minutes on low-medium heat.
  5. Garnish with crushed basil leaves and serve hot.
